Black Bean Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 4 cups cooked black beans
  • 4 cups vegetable broth
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • Sour cream and chopped cilantro, for garnish

Black Bean Soup

Recipe:

  1. Heat olive oil in a large pot over medium heat. Add the onion, garlic, and green bell pepper. Cook until softened, about 5 minutes.
  2. Stir in the cumin, smoked paprika, and chili powder. Cook for another minute to release the flavors.
  3. Add the black beans, vegetable broth, and bay leaf. Stir well and bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 45 minutes, stirring occasionally.
  5. Remove the bay leaf. Use an immersion blender to partially blend the soup, leaving some beans whole for texture.
  6. Season with salt, black pepper, and lime juice to taste.
  7. Serve hot, garnished with sour cream and chopped cilantro.
