Ingredients:
- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 4 cups cooked black beans
- 4 cups vegetable broth
- 1 bay leaf
- Salt and black pepper, to taste
- Juice of 1 lime
- Sour cream and chopped cilantro, for garnish
Recipe:
- Heat olive oil in a large pot over medium heat. Add the onion, garlic, and green bell pepper. Cook until softened, about 5 minutes.
- Stir in the cumin, smoked paprika, and chili powder. Cook for another minute to release the flavors.
- Add the black beans, vegetable broth, and bay leaf. Stir well and bring to a boil.
- Reduce heat to low, cover, and simmer for about 45 minutes, stirring occasionally.
- Remove the bay leaf. Use an immersion blender to partially blend the soup, leaving some beans whole for texture.
- Season with salt, black pepper, and lime juice to taste.
- Serve hot, garnished with sour cream and chopped cilantro.
