For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
For the Peppermint Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1-2 tbsp milk
- 1 tsp peppermint extract
- crushed peppermint candies (for garnish)

- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and light brown sugar together until light and fluffy.
- Beat in the eggs one at a time, then add vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until fully combined.
- Scoop the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are set. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy. Gradually add powdered sugar, milk, and peppermint extract, beating until smooth.
- Once the cookies are fully cooled, spread the frosting on top and garnish with crushed peppermint candies.
