  • 1 bay leaf
  • 1 tsp fresh thyme, chopped
  • salt and pepper, to taste
  • 1 baguette, sliced
  • 1 1/2 cups grated Gruyère cheese

  1. In a large pot, melt butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 30-40 minutes, until the onions are caramelized and golden brown.
  2. Add the minced garlic and flour to the onions and cook for another 2 minutes, stirring constantly.
  3. Pour in the beef broth and white wine, stirring well. Add the bay leaf and thyme. Season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  4. While the soup simmers, preheat your oven to 400°F. Place the baguette slices on a baking sheet and toast them until golden.
  5. Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top of each, and sprinkle generously with grated Gruyère cheese.
