French Onion Soup

Ingredients:
- 3 large yellow onions, thinly sliced
- 1/4 cup unsalted butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp all-purpose flour
- 8 cups beef broth
- 1/2 cup dry white wine
- 1 bay leaf
- 1 tsp fresh thyme, chopped
- salt and pepper, to taste
- 1 baguette, sliced
- 1 1/2 cups grated Gruyère cheese
Recipe:
- In a large pot, melt butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 30-40 minutes, until the onions are caramelized and golden brown.
- Add the minced garlic and flour to the onions and cook for another 2 minutes, stirring constantly.
- Pour in the beef broth and white wine, stirring well. Add the bay leaf and thyme. Season with salt and pepper to taste. Bring the soup to a boil, then reduce the heat and let it simmer for 20-30 minutes.
- While the soup simmers, preheat your oven to 400°F. Place the baguette slices on a baking sheet and toast them until golden.
- Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top of each, and sprinkle generously with grated Gruyère cheese.
- Place the bowls under the broiler until the cheese is melted and bubbly, about 3-5 minutes.
