Ingredients:
- 1.5 lbs chicken thighs, boneless and skinless
- 2 tbsp honey
- 2 tbsp curry powder
- 1 cup carrots, sliced
- 1 cup bell peppers, chopped
- 1 cup broccoli florets
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup chicken broth
- salt and pepper, to taste
Recipe:
- Preheat the oven to 375°F.
- In a small bowl, mix the honey and curry powder.
- Rub the honey and curry mixture all over the chicken thighs.
- Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken thighs and sear until golden brown on both sides.
- Remove the chicken from the skillet and set aside. Add the onion and garlic to the skillet and sauté until softened.
- Add the carrots, bell peppers, and broccoli to the skillet and cook for a few minutes until they start to soften.
- Pour in the chicken broth and stir to combine.
- Return the chicken thighs to the skillet and place it in the oven. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Season with salt and pepper to taste before serving.
