Okonomiyaki

Okonomiyaki is a beloved Japanese savory pancake, often described as “Japanese pizza” due to its customizable nature. Originating from Osaka and Hiroshima, this dish features a batter of flour, eggs, and shredded cabbage, cooked on a griddle and topped with ingredients like pork, seafood, or cheese. It’s finished with tangy okonomiyaki sauce, mayonnaise, bonito flakes, and seaweed, creating a rich, umami-packed treat.
Cooking Time:

Ingredients:
- 2 cups all-purpose flour
- 1½ cups dashi stock (or water)
- 2 large eggs
- ½ medium head cabbage, finely shredded
- 4 green onions, sliced
- 8 strips of thinly sliced pork belly (or bacon)
- Vegetable oil, for frying
- Okonomiyaki sauce, to taste
- Japanese mayonnaise, to taste
- Bonito flakes (katsuobushi), for garnish
- Aonori (seaweed flakes), for garnish

Recipe:
- In a bowl, mix the flour, dashi stock, and eggs until smooth.
- Fold in the shredded cabbage and green onions until evenly coated.
- Heat a griddle or large skillet over medium heat and add a little vegetable oil.
- Spoon out about 1 cup of batter for each pancake and spread into a circle. Place pork belly slices on top.
- Cook for 5–7 minutes until the bottom is golden, then flip and cook another 5–7 minutes until cooked through.
- Flip once more to crisp the pork side.
- Transfer to a plate and drizzle with okonomiyaki sauce and Japanese mayonnaise. Sprinkle with bonito flakes and aonori before serving.
