It is predominantly grown in Spain, particularly in the DOs of Jerez and Montilla-Moriles, as well as in small quantities in Australia and South America. The grape is famously used to produce sweet, dark dessert wines and sherries, known for their rich, raisiny flavors. Its name is attributed to a Spanish soldier, Pedro Ximénez, who is said to have brought the grape to Spain from the Rhine region. The grape’s high sugar content makes it ideal for sun-drying, concentrating its sweetness for winemaking.
