Tomato Rice Soup

Recipe of Tomato Rice Soup, a comforting and simple dish blending ripe tomatoes, tender rice, and aromatic herbs. It’s a light yet satisfying soup, perfect as a starter or a light meal, popular in many cuisines for its vibrant flavor and ease of preparation.

Ingredients:
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- ½ cup long-grain white rice
- 1 tsp dried basil
- ½ tsp dried oregano
- Salt and pepper, to taste
- Fresh parsley, for garnish
Recipe:
- In a large pot, heat olive oil over medium heat. Sauté onion until soft, about 5 minutes.
- Add garlic and cook for another 1–2 minutes until fragrant.
- Stir in the crushed tomatoes, broth, basil, and oregano. Bring to a boil.
- Add the rice, reduce heat to low, and simmer for about 20–25 minutes until the rice is tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
