Tomato Rice Soup recipe

Ingredients:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • ½ cup long-grain white rice
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Recipe:

  1. In a large pot, heat olive oil over medium heat. Sauté onion until soft, about 5 minutes.
  2. Add garlic and cook for another 1–2 minutes until fragrant.
  3. Stir in the crushed tomatoes, broth, basil, and oregano. Bring to a boil.
  4. Add the rice, reduce heat to low, and simmer for about 20–25 minutes until the rice is tender.
  5. Season with salt and pepper to taste.
