Ingredients:
- 1 1/2 cups basmati rice
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp ground turmeric
- 3 cups vegetable broth
- 1 tsp salt
- fresh parsley, chopped (for garnish)
Recipe:
- Rinse the rice under cold water until the water runs clear. Drain well.
- Heat the olive oil in a medium-sized pot over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
- Stir in the turmeric and cook for another 30 seconds.
- Add the rice and stir to coat with the garlic and turmeric mixture.
- Pour in the vegetable broth and add salt. Bring to a boil, then reduce heat to low and cover the pot. Simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
