Ingredients:
- 1 lb chicken breast, thinly sliced
- 2 cups fresh pineapple chunks
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp ginger, grated
- salt and pepper, to taste
- cooked rice, for serving
Recipe:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken slices, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining olive oil, garlic, and ginger. Sauté for about 1 minute until fragrant.
- Add the broccoli florets and red bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Return the chicken to the skillet, then add the pineapple chunks, soy sauce, and honey. Stir well to combine and cook for an additional 2-3 minutes until heated through.
- Serve the stir fry over cooked rice.
