Chickpea and Lentil Stew With Spices

Ingredients:
- 1 cup dried chickpeas or 1 can chickpeas, drained and rinsed
- 1 cup dried lentils, any variety
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch piece of ginger, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp ground paprika
- 1/4 tsp cayenne pepper (optional)
- salt, to taste
- black pepper, to taste
- 2 tbsp olive oil
- Fresh cilantro for garnish
Recipe:
- If using dried chickpeas, soak them in water overnight. Drain and rinse before using. If using canned chickpeas, drain and rinse them.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and ginger to the pot, and cook for another 2 minutes, stirring frequently.
- Stir in the ground cumin, coriander, turmeric, paprika, and cayenne pepper. Cook the spices for 1 minute to release their aromas.
- Add the diced tomatoes, chickpeas, lentils, and vegetable broth to the pot. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 45 minutes, or until the lentils are tender and the chickpeas are cooked through.
- Season the stew with salt and black pepper to taste. Adjust the seasoning as needed.
- Garnish the stew with fresh cilantro and serve hot, either on its own or with a side of bread.
