Creamy Spinach Muffins

Ingredients:
- 3 bananas
- 3 eggs
- 3 tbsp. maple syrup or honey
- 1 tsp. vanilla extract
- 3 cups spinach
- 2 cups almond flour
- ½ cup cocoa powder
- ½ cup cereals
- 3 tbsp. chia seeds
- 1 tbsp. baking soda
- ½ tsp. salt
- milk of choice, as needed for blending
- ⅓ cup dark chocolate chips
Recipe:
1. Prepare the muffin tin by preheating the oven to 350°F, lining the tin with muffin liners, and spraying the liners with nonstick spray.
2. In a high-powered blender, blend bananas, eggs, maple syrup, vanilla, and spinach until smooth for the wet mixture.
3. Add almond flour, cacao powder, oats, baking soda, and salt to the blender and mix until smooth for the dry ingredients.
4. Manually stir dark chocolate chips into the batter, or choose any preferred type of chocolate chips.
5. Evenly distribute the batter into the prepared liners, adding a few chocolate chips on top, and bake.
6. Finish by sprinkling a touch of chocolate chips on top, let cool, and enjoy plain or with a dollop of nut butter.
