Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 4 (8 oz each) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup heavy cream
- 1 cup semisweet chocolate chips
For the Nutella Ganache:
- 1/2 cup Nutella
- 1/2 cup heavy cream
Recipe:
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form an even layer.
- Bake for 10 minutes, then remove from the oven and let cool.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the sugar and beat until combined.
- Add the sour cream and vanilla extract, mixing well.
- Beat in the eggs one at a time, making sure each is fully incorporated before adding the next.
- Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth. Let cool slightly, then fold into the cream cheese mixture.
- Pour the filling over the cooled crust in the springform pan.
- Bake for 1 hour, then turn off the oven and leave the cheesecake in the oven with the door slightly open for 1 hour. After that, remove from the oven and let it cool to room temperature. Refrigerate for at least 2 hours or overnight.
- Prepare the Nutella Ganache:
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and stir in the Nutella until smooth. Let cool slightly before spreading over the chilled cheesecake.
- Spread the Nutella ganache evenly over the top of the chilled cheesecake. Refrigerate for another hour before serving.
