Recipe of Coulibiac (Kulebyaka), a traditional Russian pie celebrated for its rich, layered filling of fish, rice, eggs, and mushrooms, all encased in a buttery pastry crust. Ingredients:
For the dough:
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 1 cup unsalted butter
- 1/2 cup sour cream
- 1 egg
For the filling:
- 1 lb salmon fillet
- 1 cup long-grain rice
- 1/2 lb mushrooms, finely chopped
- 1 onion, finely chopped
- 3 hard-boiled eggs, chopped
- 2 tbsp dill, chopped
- Salt and pepper, to taste
- 2 tbsp butter
For assembly:
- 1 egg yolk (for egg wash)
Recipe:
- Boil the rice until tender, drain, and set aside.
- Sauté the mushrooms and onion in butter until golden, season with salt and pepper.
- Poach the salmon gently until cooked through, then flake it into large pieces.
- Combine the rice with chopped dill and season to taste.
- Prepare the dough by mixing flour, salt, sugar, butter, sour cream, and egg into a smooth dough. Chill for 30 minutes.
- Roll out 2/3 of the dough into a rectangle and place on a baking sheet.
- Layer the filling: (1) rice mixture, (2) mushrooms and onions, (3) salmon, (4) chopped eggs.
- Roll out the remaining dough and cover the pie. Seal the edges and make decorative slits on top.
- Brush with egg yolk and bake at 375°F for 40–45 minutes until golden brown.
- Let rest for 10 minutes before slicing.
