Ingredients:
- 1 lb crab meat (lump or claw)
- 2 tbsp butter
- 1 onion, finely chopped
- 2 celery stalks, finely chopped
- 1 carrot, finely chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tbsp all-purpose flour
- ½ cup dry white wine
- 4 cups seafood stock
- 1 cup heavy cream
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, for garnish
Recipe:
- In a large pot, melt the butter over medium heat.
- Add onion, celery, carrot, and garlic; sauté until soft (about 5–7 minutes).
- Stir in tomato paste and cook for 2 minutes.
- Sprinkle flour over vegetables and stir well for 1–2 minutes.
- Pour in white wine, stirring to deglaze the pot.
- Add seafood stock and bay leaf; bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove bay leaf and blend the soup until smooth using an immersion blender.
- Return soup to the pot, stir in crab meat and cream.
- Simmer for another 5–7 minutes, seasoning with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
