Ingredients:
- 4 medium zucchini, halved lengthwise
- 1 lb cooked chicken breast, shredded
- 1 cup cherry tomatoes, diced
- 1 cup mozzarella cheese, shredded
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- salt, to taste
- black pepper, to taste
- fresh basil, for garnish
Recipe:
- Preheat the grill to medium-high heat.
- Scoop out the center of each zucchini half, creating boats. Brush the zucchini with olive oil and season with salt, black pepper, garlic powder, and Italian seasoning.
- Place the zucchini boats on the grill, cut side down, and cook for 5-7 minutes until they have grill marks and begin to soften.
- In a bowl, mix the shredded chicken, diced cherry tomatoes, and half of the mozzarella cheese.
- Remove the zucchini from the grill, flip them over, and fill each boat with the chicken mixture.
- Sprinkle the remaining mozzarella cheese on top of each stuffed zucchini.
- Return the zucchini boats to the grill, cover, and cook for another 5-10 minutes, until the cheese is melted and bubbly.
- Garnish with fresh basil before serving.
