Ingredients:
- 1 large sweet potato
- 4 cups kale, chopped
- 2 tbsp olive oil
- 1/4 cup dried cranberries
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- salt, to taste
- black pepper, to taste
Recipe:
- Preheat the oven to 400°F.
- Peel and dice the sweet potato into small cubes. Toss with 1 tbsp of olive oil, salt, and pepper.
- Spread the sweet potato cubes on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
- While the sweet potato is roasting, prepare the kale. Remove the tough stems and chop the leaves into bite-sized pieces.
- In a large bowl, massage the chopped kale with the remaining 1 tbsp of olive oil until the leaves are softened.
- Add the roasted sweet potato, dried cranberries, walnuts, and feta cheese to the kale.
- In a small bowl, whisk together the balsamic vinegar and honey. Pour over the salad and toss to combine.
- Season with additional salt and black pepper to taste.
- Serve immediately or chill for 10-15 minutes before serving.
