Mushroom Barley Soup

Recipe of Mushroom Barley Soup, a hearty and comforting dish made with earthy mushrooms and nutty pearl barley. This soup is a staple in Eastern European cuisine, offering deep flavors and satisfying warmth, perfect for chilly days.

Ingredients:
- 1 cup pearl barley
- 8 oz fresh mushrooms (cremini or button), sliced
- 1 small onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 clove garlic, minced
- 6 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley, for garnish
Recipe:
- Rinse the pearl barley under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Sauté onions, carrots, and celery for about 5 minutes until softened.
- Add garlic and mushrooms; cook for another 5 minutes until mushrooms release their juices.
- Stir in the barley, vegetable broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat to low and simmer for 50–60 minutes, stirring occasionally, until the barley is tender.
- Adjust seasoning as needed and garnish with fresh parsley before serving.
