Mushroom Barley Soup recipe

Ingredients:

  • 1 cup pearl barley
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 small onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 clove garlic, minced
  • 6 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Recipe:

  1. Rinse the pearl barley under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Sauté onions, carrots, and celery for about 5 minutes until softened.

  4. Stir in the barley, vegetable broth, thyme, salt, and pepper. Bring to a boil.
