Ingredients:

  • 2 cups basmati or long-grain rice
  • 2 tbsp butter or oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, julienned
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp ground cinnamon
  • 1/4 cup raisins or dried apricots (optional)
  • 1/4 cup slivered almonds or pistachios (optional)
  • 3 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Recipe:

  1. Rinse the rice under cold water until the water runs clear. Soak for 20 minutes, then drain.
  2. In a large pot, heat butter or oil over medium heat. Sauté the onion until translucent, about 5 minutes.
  3. Add garlic, carrot, cumin, coriander, and cinnamon. Cook for 2–3 minutes until fragrant.
  4. Stir in the drained rice, ensuring each grain is coated with the spice mixture. Toast for 2 minutes.
  5. Add raisins or dried apricots and slivered almonds or pistachios, if using.
  6. Pour in the broth, season with salt and pepper, and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 15–20 minutes until the liquid is absorbed and rice is tender.
  8. Remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork before serving.
  9. Garnish with fresh parsley or cilantro.
