Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup shelled pistachios, finely ground
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1 cup fresh strawberries, chopped
For Lemon Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1/4 tsp vanilla extract
Recipe:
- Preheat the oven to 350°F and grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, ground pistachios, baking powder, and salt.
- In a separate large bowl, beat the softened butter and sugar until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, starting and ending with the dry ingredients. Mix until just combined.
- Gently fold in the chopped strawberries, being careful not to overmix.
- Pour the batter into the prepared cake pan and spread evenly. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.
For the Lemon Frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, lemon juice, lemon zest, and vanilla extract, beating on low speed until smooth and fluffy.
- Once the cake has cooled, spread the lemon frosting evenly over the top. Garnish with additional chopped pistachios or strawberry slices if desired.
