Ingredients:
- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- ¾ cup brown sugar
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, melted
- 1½ cups fresh or frozen raspberries
- ¼ cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch

- Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, mix together the flour, oats, brown sugar, baking soda, and salt. Pour in the melted butter and stir until the mixture is crumbly.
- Press about two-thirds of the crumb mixture into the prepared baking pan, creating an even layer.
- In a separate bowl, combine the raspberries, granulated sugar, lemon juice, and cornstarch. Mix gently until the raspberries are evenly coated.
- Spread the raspberry mixture over the crumb base in the baking pan.
- Sprinkle the remaining crumb mixture over the raspberries, pressing it down lightly.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbling.
- Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve.
