Ingredients:
- 8 oz (225 g) pasta (such as penne or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup lettuce, chopped
- ½ cup cucumber, diced
- ¼ cup red onion, thinly sliced
- ¼ cup black olives, sliced
- ¼ cup fresh basil leaves, chopped
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- salt and pepper to taste
Recipe:
- Cook the pasta according to the package instructions. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, lettuce, cucumber, red onion, black olives, and fresh basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper to taste.
- Pour the dressing over the pasta salad and toss gently to combine.
- Chill in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
