Corn Cream Soup recipe

Ingredients:

  • 4 cups corn kernels (fresh or frozen)
  • 2 tbsp unsalted butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • salt and pepper to taste
  • fresh parsley for garnish

Recipe:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
  2. Stir in the corn kernels, and cook for another 3 minutes.
  3. Pour in the broth, and bring the mixture to a boil. Reduce the heat and let it simmer for 10-15 minutes.
  4. Use an immersion blender to purée the soup until smooth, or transfer it to a blender in batches.
  5. Stir in the heavy cream, and season with salt and pepper to taste.
  6. Heat the soup gently, making sure not to bring it to a boil after adding the cream.
  7. Serve hot, garnished with fresh parsley.
