Ingredients:
- 3 cups zucchini, thinly sliced
- 1 medium onion, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/2 cup milk
- 2 eggs, beaten
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Recipe:
- Preheat the oven to 350°F. Grease a 9-inch pie dish.
- In a large bowl, combine the zucchini, onion, cheddar cheese, Parmesan cheese, and parsley.
- In another bowl, whisk together the milk, eggs, flour, baking powder, salt, and black pepper until smooth.
- Pour the wet mixture into the zucchini mixture and stir until well combined.
