Cheddar and Broccoli Cream Soup

Ingredients:
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup milk
- 2 tbsp butter
- 2 tbsp all-purpose flour
- salt and pepper, to taste
Recipe:
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.
- Stir in the flour and cook for 1-2 minutes to create a roux.
- Gradually add the vegetable broth, stirring constantly until the mixture thickens.
- Add the broccoli florets and cook for about 10 minutes, or until the broccoli is tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Return the soup to the pot, and stir in the milk and shredded cheddar cheese. Heat until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste. Serve warm.
