Recipe of Julienne, a classic Russian hot appetizer made with mushrooms, cream, and cheese, traditionally baked in small cocottes. Despite the French-sounding name, it’s a firmly Russian dish found in many Soviet-era and modern restaurants. Creamy, savory, and aromatic, it’s perfect as a starter or hearty snack.

Ingredients:
- 10 oz mushrooms (champignons or forest mushrooms), sliced
- 1 small onion, finely chopped
- 1 tbsp butter
- 1 tbsp flour
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 1/2 cup grated hard cheese (e.g. Emmental, Gruyère, or Russian cheese)
- Salt and pepper to taste
- Optional: a pinch of nutmeg
Recipe:
- In a skillet, melt butter and sauté the onion until soft and translucent.
- Add mushrooms and cook over medium heat until all moisture has evaporated and mushrooms are golden.
- Sprinkle flour over the mushrooms, stir well, and cook for 1 minute.
- Pour in the cream and sour cream, stir until smooth and gently simmer for 5–7 minutes. Add salt, pepper, and nutmeg if using.
- Transfer the mixture into small baking dishes or ramekins. Sprinkle cheese on top.
- Bake at 375°F for 15–20 minutes, until the cheese is melted and golden.
