Recipe of Samboosa, a traditional savory pastry popular in Saudi Arabia, especially during Ramadan. These triangular treats are typically filled with spiced meat, vegetables, or cheese, then deep-fried until golden and crispy. With origins tracing back to Central Asia and Persia, Samboosa has become a beloved part of Saudi iftar meals.

Ingredients:
- 1 pack of samboosa wrappers (or spring roll pastry)
- 1 lb ground beef or lamb
- 1 small onion, finely chopped
- 2 tbsp oil or ghee
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- Salt and pepper, to taste
- 2 tbsp chopped parsley or cilantro
- Oil for frying
Recipe:
- Heat oil or ghee in a pan and sauté the onions until soft.
- Add the ground meat and cook until browned and fully cooked.
- Stir in the spices, salt, and pepper. Cook for another 2–3 minutes.
- Remove from heat, mix in chopped herbs, and let the filling cool.
- Take a samboosa wrapper, place a spoonful of filling at one end, and fold it into a triangle, sealing with a flour paste or water.
- Repeat with the remaining filling and wrappers.
- Heat oil in a deep fryer or pan. Fry samboosas in batches until golden and crispy.
- Drain on paper towels.
