Ingredients:
- 1 lb ground beef
- 1 cup pumpkin puree
- 1/2 cup breadcrumbs
- 1 egg
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- salt and pepper, to taste
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp red pepper flakes (optional)
- fresh cilantro, for garnish
Recipe:
- Preheat your oven to 375°F.
- In a large bowl, combine the ground beef, pumpkin puree, breadcrumbs, egg, ground cinnamon, ground nutmeg, salt, and pepper. Mix until well combined.
- Shape the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through.
- While the meatballs are baking, heat olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and fragrant.
- Stir in the curry powder, ground turmeric, ground cumin, ground coriander, and red pepper flakes, cooking for 1-2 minutes until the spices are fragrant.
- Pour in the coconut milk, stirring to combine the spices with the milk. Bring the mixture to a simmer.
- Once the meatballs are cooked, add them to the skillet with the coconut curry sauce. Simmer the meatballs in the sauce for 10 minutes, allowing the flavors to meld.
- Serve the meatballs hot, garnished with fresh cilantro.
