Texas Chickpea Curry recipe

Ingredients:

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14 oz) coconut milk
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 small head of cauliflower, cut into florets
  • 1 can (14 oz) diced tomatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • fresh cilantro, for garnish
  • cooked rice, for serving

Recipe:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  2. Add the minced garlic, curry powder, cumin, and cayenne pepper (if using). Sauté for another 2 minutes until fragrant.
  3. Stir in the coconut milk, chickpeas, cauliflower florets, diced tomatoes, salt, and black pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover, and let simmer for 25-30 minutes, or until the cauliflower is tender.
  5. Adjust seasoning with more salt and pepper if needed.
  6. Garnish with fresh cilantro and serve hot with cooked rice.
