Ingredients:
- 1 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp cumin
- 1/2 tsp cayenne pepper (optional)
- 1 can (14 oz) coconut milk
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 small head of cauliflower, cut into florets
- 1 can (14 oz) diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- fresh cilantro, for garnish
- cooked rice, for serving
Recipe:
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic, curry powder, cumin, and cayenne pepper (if using). Sauté for another 2 minutes until fragrant.
- Stir in the coconut milk, chickpeas, cauliflower florets, diced tomatoes, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover, and let simmer for 25-30 minutes, or until the cauliflower is tender.
- Adjust seasoning with more salt and pepper if needed.
- Garnish with fresh cilantro and serve hot with cooked rice.
