Ingredients:
- 1 cup yellow cornmeal
- 1 cup whole wheat pastry flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/8 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup mashed batata
- 1 large egg
- 1 1/4 cup almond milk
- 1/4 cup pure maple syrup
- 2 tablespoons melted butter
Recipe:
1. Preheat your oven to 400 degrees Fahrenheit. Generously grease a muffin tin with nonstick cooking spray, or use paper liners. To prevent sticking, consider spraying the inside of the liners as well.
2. Take a large bowl and whisk together the following dry ingredients: flour, cornmeal, baking powder, salt, cinnamon, allspice, and nutmeg.
3. In another large bowl, combine the mashed sweet potato, egg, almond milk, maple syrup, and melted butter or oil.
4. Combine the dry ingredients with the rest and stir the mixture with a spoon until it’s just combined. Then, evenly divide the batter into the prepared muffin liners.
5. Bake the muffins for 25 minutes or until a toothpick comes out clean, or with just a few crumbs attached. Serve the muffins warm, along with a bit of butter and a drizzle of maple syrup!
