Vanilla Rice Pudding

Ingredients:
- 4 ½ cups whole milk or coconut milk
- ¾ cup short grain rice
- ¼ cup maple syrup or honey
- pinch of salt
- ½ cup raisins
- 1 teaspoon vanilla extract
- ¼ teaspoon ground cinnamon
Recipe:
1. Combine milk, rice, maple syrup, and salt in a large saucepan. Bring the mixture to a simmer over medium-high heat, stirring frequently.
2. Lower the heat to low, partially cover with a lid, and cook for 25 to 30 minutes, stirring regularly to avoid rice sticking to the saucepan, until the rice reaches a tender consistency.
3. Take the saucepan off the heat and add raisins, vanilla, and cinnamon to the mixture.
4. Enjoy the pudding warm or cold. Note that it will have a thinner consistency when warm and will thicken as it cools.
