The “Old Cuban” cocktail was crafted by Audrey Saunders at the Pegu Club in New York City in the early 2000s. Saunders, a renowned mixologist, added a twist to the classic Mojito by incorporating Champagne and sparkling wine, resulting in the elevated and popular cocktail. Although not directly tied to Cuba, the cocktail pays homage to the country’s rum heritage with its key ingredient.

Old Cuban cocktail


  • 6/8 pcs Mint Leaves
  • 45 ml Aged Rum
  • 23 ml Fresh Lime Juice
  • 30 ml Simple Syrup
  • 2 Dashes Angostura Bitters
  • 60 ml Brut Champagne or Prosecco

Combine all the ingredients in a cocktail shaker, excluding the wine, shake thoroughly with ice, and strain the mixture into a chilled, sophisticated cocktail glass. Finish by topping it up with sparkling wine.
